In winter, having tomato and onion salad for dinner can feel a bit sad; you might picture a simple lettuce tossed together quickly. But tomato and red onion salad reminds me of warmer days, and it’s a lovely way to bring a burst of color and flavor to the season.

Tomato and onion salad ingredients

  • Greens
  • red onion
  • 3 tablespoons extra virgin olive oil
  • Salt
  • to taste
  • Black ground pepper

Preparation

Peel the red onion and cut it in half vertically, then into thin wedges. Separate the layers and add them to the bowl along with the tomatoes and greens.

Season with salt to taste, dress with 3 tablespoons of extra virgin olive oil, and add a generous sprinkle of black ground pepper and oregano or basil to your preference, or even a mix of both.
